Inspired by the popular baked potato bars in Ireland, we’ll be making this delicious meal for St. Patrick’s Day this year. There really is nothing better than a baked potato smothered in cheese with a bunch of toppings plus it’s really simple meal to make!
ingredients:
large russet potatoes (1 per person)
cheese (a must!)
chili
steamed veggies
sour cream
to bake the potatoes:
1.Preheat oven to 350 degrees.
2.Wash the potatoes really well and poke about 8 holes in them using a fork. Then place them on a plate or tray and coat them in olive oil and sprinkle with sea salt.
3.Place the potatoes directly on the center rack in the oven and place a tray underneath to catch any drippings. Bake for about 1 hour. You can use a fork to poke into the center of the potato, if it is soft it is done. You can use whichever toppings you like for your bar, be as creative as you like!
We like to use this roll of faux grass (purchased from our local hardware store) as well as a few plastic animals to portray the rolling hills of Ireland, just in case people forget.
